Philly Cheesesteak Sliders

Ingredients 

  • 1.5-2 lbs rib eye roast frozen shaved/sliced thin. Then cooked.
  • 1 green bell pepper, thinly sliced or chopped
  • 1 onion, thinly slice
  • 1 cup, cremini mushrooms, thinly sliced
  • 4-5 Tbsp butter
  • 8-12 slices provolone cheese
  • 1/4 cup Worcestershire sauce
  • salt and pepper, to taste
  • 8-12 King’s Hawaiian Rolls (ideal for sliders!)

Recipe 

  1. Heat your large skillet to med-high. Add 2 Tbsp butter and allow to melt.
  2. Add veggies to melted butter and sauté for about 5 minutes.
  3. Move to the side, or remove from pan altogether and set aside.
  4. Add 2 more Tbsp butter and allow to melt.
  5. Add the shaved beef steak and begin to brown on one side.
  6. Season meat with salt and pepper.
  7. Once you have flipped it once, add in Worcestershire sauce and continue to cook until meat is cooked to your likeness.
  8. Mix veggies in with cooked meat.
  9. Separate each “sandwich” portion and top with a couple pieces of cheese. Allow cheese to melt.
  10. Add each portion to a King’s Hawaiian’s Roll and Enjoy!

Kansas City Touchdown BBQ Sliders

Ingredients 

Ribs/Sliders

  • 2 racks pork ribs, silver lining membrane removed.
  • 1 bottle of Beer
  • 1 tspb ground cumin
  • 1 grated orange peel
  • 1 tbsp brown sugar
  • 3 garlic cloves, grated
  • 3 tbps ketchup
  • 1 tbsp hot sauce sauce
  • 1/2 cup of crusted pistachios (garnish)
  • Orange zest (garnish)
  • King’s Hawaiian Rolls

MDP’s BBQ sauce 

  • 1 cup ketchup
  • 1 tsp. chili powder
  • 12 oz. (355 mL)
  • Beer
  • 1 tsp. smoked paprika
  • 1 Tbsp. garlic powder
  • 1 Tbsp. yellow mustard
  • 1/2 tsp. cayenne pepper
  • 2 Tbsp. brown sugar
  • 2 Tbsp. molasses
  • 2 Tbsp. apple cider vinegar

 

Recipes 

Sauce 

  1. Whisk all ingredients in a sauce pan and turn heat to medium, bringing sauce to a slow boil.
  2. Reduce heat and simmer for 20 minutes, let cool
  3.  Serve with your favourite BBQ dishes
  4. Keep in air tight container for 2-3 weeks

Sliders

  1. Cut the 2 racks into halves giving you 4 pieces. Place into a dish
  2. Mix all the ingredients minus the pistachios in a medium sized mixing bowl.
  3. Pour marinade all over the ribs fully covering them. Cover with tin foil and place into refrigerator for minimum 12 hours.
  4. Remove the ribs from the refrigerator still While covered and let sit at room temp for 30-45 mins.
  5. In the meantime pre-heat the oven to 275f and 137c.
  6. Place ribs on a baking sheet, ensure ribs are well sauced, cover with tin foil and place in the oven.
  7. Cook the ribs for approx 2 hours.
  8.  Remove the time foil and place back in to the oven for another 15-20 mins max.
  9.  Remove from heat and let the ribs rest for 1 hour or so covered with tin foil. Remove meat from the bones, garnish with crushed pistachios.
  10. On the bottom of the King’s Hawaiian roll, add the remaining Kansas city bbq sauce and top with meat, close the King’s Hawaiian roll and enjoy

Hot BBQ Bacon Ranch Dip

Ingredients 

  • 250g pkg cream cheese, softened
  • 1 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 1/4 cup BBQ sauce
  • 2 tbsp ranch seasoning mix
  • 1 cup cooked bacon, chopped- about 4 slices
  • 1/4 cup green onions, sliced

Recipe 

  1. Preheat oven to 400°F (205°C) and lightly spray your baking dish with oil
  2. In a large bowl, combine the softened cream cheese and sour cream. Use a mixer or some elbow grease to blend until smooth.
  3. Once it’s smooth, stir in the shredded cheddar cheese, BBQ sauce, and ranch seasoning mix.
  4. Pull a Moira Rose and fold in the chopped bacon. Save a bit for the top if you’re feeling fancy af.
  5. Transfer the mixture into an oven-safe baking dish and spread it until even.
  6. Slide your dish into the oven and let it bake for about 20-25 minutes, or until it’s bubbly and golden.
  7. Once it’s out of the oven and slightly cooled, sprinkle the sliced green onions on top. Dig in with your favourite dippers: tortilla chips, crackers, or even crudités if you want to feel a little healthy (for balance, right?).

Cheesy Pepperoni Pizza Dip

Ingredients 

  • 250g pkg cream cheese, softened
  • 1 cup shredded mozzarella cheese, plus ½ cup for topping
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup red bell peppers, diced
  • 1/2 cup onion, diced
  • 1 cup pizza sauce
  • 1/2 cup pepperoni, chopped plus 8-10 whole for the top
  • 1 tsp Italian seasoning

Recipe 

  1. Preheat oven to 375°F (190°C) while you prepare to get cheesy in the kitchen.
  2. In a bowl, combine the softened cream cheese, mozzarella, Parmesan, peppers, onion and seasoning then mix together using a hand mixer.
  3. Spread the mixture evenly into the bottom of an oven-safe dish.
  4. Pour the pizza sauce over your cheese layer and spread until the surface is covered
  5. Next, sprinkle the remaining mozzarella cheese on the pizza sauce then top with the whole pepperoni.
  6. Pop your dish into the oven and bake for about 20 minutes until the cheese is bubbly and golden.
  7. Let it cool slightly (if you can wait that long), then serve with crackers, sliced bread, or those mini-toasts that make you feel super fancy.

Tiramisu

Tiramisu is such a classic dessert. However, we never knew how much we loved it until we took our first trip to Barcelona together and ordered it off the dessert menu at Bar Cañete. Let’s just say that it’s one of the tastiest desserts, and in this version it’s made even tastier yet with a luxurious topping of softly whipped cream and mascarpone that cascades down the sides, enveloping every inch of it. But man, it’s so ugly to look at. Like all relationships, though, there’s more (much more) than meets the eye. Don’t let appearances fool you; this one’s got the goods for a truly happy ending.

 

Ingredients: 

  • 3 tablespoons granulated sugar
  • 6 large egg yolks
  • 1½ cups espresso, room temperature, divided
  • 16 ounces mascarpone
  • 1 ounce dark rum
  • 24 lady fingers (about one 13-ounce package)
  • ½ cup heavy cream
  • 1 tablespoon powdered sugar
  • 1 tablespoon cocoa powder, for dusting

Recipe:

  1. In a stand mixer fitted with the whisk attachment, whisk the sugar and egg yolks on medium-high speed until frothy. Add 1 teaspoon of the espresso and the mascarpone and whisk on medium speed until smooth. Scoop out ¼ cup of the mascarpone mixture for the whipped cream topping and place in the refrigerator until needed.
  2. Pour the remaining espresso into a medium bowl and add the rum. (why not have a shot of rum yourself while you’re at it?)
  3. Dip half of the lady fingers into the espresso and rum mixture and arrange in a 9 by 13-inch baking pan.
  4. Top with about half of the mascarpone mixture, then repeat with the remaining lady fingers, espresso mixture, and mascarpone mixture to make two layers.
  5. Chill for 2 hours, then cut into portions and plate.
  6. Using a metal bowl and a hand whisk so that you don’t overmix, whip the cream and powdered sugar until soft peaks form. Fold in the reserved mascarpone mixture and dollop over each portion of tiramisu.
  7. Garnish with the cocoa powder and serve.

 

Hot Tip:

Real espresso is a must here because tiramisu needs the decadent chocolate notes you get from good espresso. If you don’t have an espresso machine at home, visit your local barista and order some up for takeaway.

This no-bake recipe uses raw egg yolks, so be sure to use farm-fresh pastured eggs; if you’re not comfortable using raw eggs, you can use pasteurized eggs instead.

If you can’t finish it all, you can store leftover tiramisu in the refrigerator for up to a week.

 

Spaghetti Carbonara

Like most relationships, carbonara is hard to master unless you put in the work. But when you do, it’s a dish that you’ll crave on repeat because with pork fat, cheese, and eggs, what’s not to love?

 

Ingredients:

  • 7 ounces spaghetti
  • 1½ cups guanciale lardons
  • 1 cup grated pecorino
  • 1½ cups grated parmigiano-reggiano cheese
  • 4 large egg yolks
  • 1 teaspoon ground black pepper

 

Recipe:

  1. Bring a large pot of salted water to a boil, then drop in the spaghetti and cook according to the package directions until it reaches the desired doneness. Before draining, reserve about 2 cups of the pasta cooking water.
  2. Starting in a cold frying pan, render the fat from the guanciale over medium heat. Continue cooking until the lardons are crispy.
  3. Put three-quarters of the cheese in a mixing bowl and add the egg yolks. Whisk in a small amount of the pasta water and 2 tablespoons of the guanciale fat.
  4. Add the spaghetti to the bowl and stir. Adjust the consistency as desired with more pasta water or extra cheese. Toss in half of the guanciale and plate.
  5. Garnish with the remaining cheese and guanciale and finish with pepper.

 

Hot Tip: It’s always better to have the pasta looser at first, so always add some of the pasta cooking water. The sauce will tighten up and thicken as you enjoy your carbonara.

 

 

Wine and Cheese

Is wine and cheese always a good idea? Yes. A beautiful charcuterie board with a nice bottle of wine is a simple meal—any day, any time. Pop into your local cheesemonger and see what they recommend. Then pop into your local wine shop and do the same. To get you started, we’re sharing our favorites in the Love Tap. But know this: you can’t go wrong. You can be as adventurous and elaborate as you like or as simple as you like. It all depends on what you and your partner prefer at the end of the day (or the middle of the day…).

 

What You Need:

Cheese 

  • 3 to 4 ounces hard cheese
  • 3 to 4 ounces semi-hard cheese
  • 3 to 4 ounces soft cheese
  • 2 ounces blue cheese (optional)
  • a selection of accoutrements of choice

Wine 

  • a bottle of your favorite red, white, or sparkling

Special Equipment

  • charcuterie board
  • cheese knives
  • demitasse spoons
  • mini bowls

 

Instructions 

  1. Remove the cheeses from the refrigerator at least 30 minutes ahead of time to allow them to come to room temperature.
  2. Arrange the cheeses and accoutrements in a decorative manner on your favorite board.
  3. Serve with your favorite wine or bubbles.

 

Hot Tips:

  1. We love a variety of cheeses, such as a firm aged Parmigiano-Reggiano, Comté, or Manchego, semi-firm cheddar or Gouda, and a soft unpasteurized cow’s milk like Brie de Meaux or a Camembert. Blue cheeses, always distinctive, deserve their own category: for a more adventurous option, try Saint Agur or Roquefort; for beginners, the creamy Cambozola (or a “blue brie”) is a good choice.
  2. Also important are the “accoutrements” (accompaniments). Options include dried fruit (apricots, figs, cherries), fresh fruit (sliced apple and/or pear, figs, grapes), cured meats (fuet or Spanish jamon), nuts, honey, preserves, and fresh bread, breadsticks, or crostini.
  3. When it comes to the wine, generally the more expensive you go, the better it tastes. But we want to leave that up to you, as everyone has their own preferences and budget. For example, Randy loves a good French pinot noir or a dry white wine, whereas Katherine is a bubbles girl. If it’s a random Tuesday, she wants prosecco. If it’s a weekend, she wants cava. And for a special occasion or cause for celebration, she wants to pop open the Champagne (her favorite is Laurent Perrier Rosé Champagne).

Spelt Pasta with Miso Mushrooms and Leeks

Ingredients

  • 1 Cup of thinly sliced leek
  • 2 Cloves garlic thinly sliced
  • 400 Grams of mixed mushrooms cleaned  and sliced
  • 400 Grams of a short spelt pasta cooked
  • 50 Grams white miso
  • 1/2  Cup grated Parmesan
  • 25ml Apple cider vinegar
  • Chopped Fresh herbs to garnish parsley or chive.

Recipe 

  • Add the mushrooms to to a large deep cast iron or stainless steel pan on high heat and cook, stirring frequently, until the mushrooms have browned, and lost a lot of there moisture 6-8 minutes.
  • Then add the olive oil to the pan and toss in the leeks. Season with salt and cook, stirring often, until the leeks start to soften.
  • Meanwhile in a large stainless steel pot of boiling salted water add the pasta and cook until  just under done or very al dente.
  • Add the pasta to the pan with the leeks and mushrooms along with 150 ml of pasta water and apple cider vinegar. Mix together.
  •  In a small bowl mix the miso together with 100 ml of pasta water until smooth. Add it to the pasta pan and warm thru on medium heat.
  • Fold in cheese mixing well until the sauce coats the noodles. Taste for seasoning and add the fresh chopped herbs.
  • Serve with olive oil and cheese.

 

Viral Frozen Protein S’mores

Try the viral frozen s’mores bars with 10g of protein each! With crunchy graham crackers, rich chocolate, and a fluffy protein marshmallow filling, this healthier version of the decadent dessert is sure to leave you satiated.

 

Ingredients 

  • 10 full graham wafers (150g)
  • ½ cup semi-sweet chocolate chips (80g)
  • 1 tsp coconut oil
  • 1 tub Light Cool Whip, thawed in the fridge
  • 2 servings vanilla whey protein powder (75g)
  • 1 tbsp vanilla extract

Instructions

  1. Line a medium-size sheet pan with parchment paper.
  2. Arrange 5 graham wafers in a line, tops down.
  3. Place the chocolate chips and coconut oil in a small bowl. Microwave in 30-second intervals, stirring until melted.
  4. Spread the chocolate over the entire surface of the graham wafers. Place in the freezer for 10 minutes to firm up.
  5. Stir together the Light Cool Whip, protein powder, and vanilla extract. Quickly spread across the chocolate-coated graham wafers with an offset spatula. Place 5 graham wafers on top to align with the bottom ones.
  6. Freeze for at least 4 hours.
  7. Slice into 10 squares. Keep frozen until you’re ready to enjoy.

 

Hot Tip: Freeze bars for at least 4 hours for the ideal texture.

High Protein Banana Pudding Cups

These high protein banana pudding cups are a delicious healthy dessert to prep for the week. Made with Greek yogurt, vanilla protein powder, and fresh banana—these mini jars are the perfect breakfast, snack, or dessert with 25g of protein each.

 

Ingredients 

  •  2 Large bananas
  • 1 ½ cups (350g) 0% plain Greek yogurt
  • 2 servings (75g) vanilla whey protein powder
  • 4 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ cup graham cracker crumbs

Equipment

  • Medium size mixing bowl
  • Fork, spoon
  • 4x 6oz (175ml) jars

Instructions

  1. Peel and slice one banana into thin rounds. Set aside.
  2. Peel the other banana and place in the mixing bowl. Mash with a fork.
  3. Add the Greek yogurt, protein powder, vanilla extract, and cinnamon to the mixing bowl. Stir to combine.
  4. Fill each jar halfway with the yogurt mixture. Layer 1 tbsp graham cracker crumbs and a few banana slices in each jar. Top with the remaining yogurt mixture and another layer of graham crumbs and banana slices.
  5. Enjoy immediately or cover the jars and place in the fridge for up to 3 days.
